Sticky Chicken & Vegetable Stir Fry

When your fridge supply is dwindling, it really gets your creative juices flowing! It’s always a fun game playing ‘What Am I Making For Dinner Tonight?’ with very limited ingredients. But, from desperation often comes ingenious!


In my fridge, I had a drawer that had a few types of raw vegetables and some chicken breasts that were on their last day before I’d have to freeze them. It seemed pretty clear that I’d be making a stir fry. So, I gathered up my red onion, zucchini, broccoli, and red pepper and got to work!


I first sautéed some thinly sliced chicken breast with coconut aminos and Trader Joe’s chili onion crunch condiment which lended to this delicious caramelization and sticky quality. It was at this point that I knew this stir fry was going to be good. So, to enhance my dining experience, I threw some rice in the rice cooker.


After the chicken was ready, I pulled it out of the pan and set aside to rest while I sautéed all of the chopped vegetables in a similar preparation, adding just a touch of sesame oil, fish sauce, and himalayan pink salt. Once the vegetables got a nice color, I added the chicken back to the pan to bring up to heat and then served everything over some fresh jasmine rice and topped it with sesame seeds for an additional garnish.


I will absolutely be making this recipe on repeat. Next time you think you’re out of options for dinner, consider a stir fry! It could be a lot more successful than you’d think.
