Poached Eggs & Roasted Vegetables

I’ve noticed that a lot of people are intimidated by the idea of poaching an egg. The internet is even full of tips and tricks that just seem to overcomplicate things. My mom taught me her method of poaching an egg and it’s pretty foolproof — just boil some water and crack an egg into the pot. Let it cook until it looks like something you’d want to eat. Then just lift it out of the water with a slotted spoon and you have yourself a perfectly poached egg, every time.


I think the combination of runny egg yolk paired with a perfectly roasted sweet potato remains unmatched. Hence, why this breakfast recipe is so amazing! I even roasted up some broccoli to incorporate a bit more greenery into the start of my day. You can totally mix and match what type of roasted vegetables you serve alongside your poached eggs - might I recommend fingerling potatoes and red onion, maybe even some roasted kale? This dish has RANGE.
