I hope everyone had a safe, happy, and healthy holiday season; and welcome to spicythyme’s first blog post! I started this website just after the holiday season but had to share this recipe for the most delicious tahini banana bread!
Over the holidays, my roommates and I caught the omicron variant and had to quarantine together in our apartment. Out of sheer boredom, I wanted to bake something but couldn’t run out to the grocery store. After taking inventory of what I had on hand, I knew I’d have to make a banana bread without any nut butter. So, I took a look back in my saved posts on instagram to try to find something I could make! I had originally found this recipe from one of my favorite healthy food bloggers, @kalejunkie. I had to make some minor alterations to the recipe due to ingredient restrictions, but I was super happy with how it turned out! You can check out the original recipe on her page but I’ll list out how I made mine below!
This recipe is sweetened with ripe bananas & coconut sugar and has a deep nutty flavor imparted by the tahini. It’s super complex tasting and such a treat! I love recipes like this that encourage experimenting with ingredients.
