For whatever reason, there’s a magic component about salads that I order out that just taste way better than anything I could make at home. This is the first time I made a salad that could actually compete with my favorite salad shop - and if you know me and my salad buying habits, that’s a huge statement. You have to do yourself a favor; head to your grocery store, pick up a bunch of fresh kale, and try this salad immediately!
Given all of the snow on the ground and having to walk around Hoboken in freezing temperatures, I knew I wanted to craft up a recipe that would be super fresh and colorful in contrast. After a quick grocery run to source some inspiration, I chopped all of my ingredients and tossed them into a bowl and viola, a quick and easy lunch! This recipe would work great for meal prepping as well, just don’t mix in the dressing until you’re ready to eat.
