I was watching the third episode of the new season of Queer Eye and saw Antoni make these amazing honey glazed carrots and was obsessed. The hero of the episode, Josh, even said it was the best tasting vegetable he’s ever had! The best part of this recipe? It only uses a few ingredients that you might already have in your home!
First off, bust out your cast iron skillet. Antoni used cast iron in the show and I replicated the recipe using cast iron. I’m not too sure if the recipe would have the same effect if you cooked it in a stainless steel or non-stick pan but if you try it, let me know how it goes!
In a preheated cast iron, throw in a knob of butter and let it melt down. Add your halved carrots, swirling the pan to coat them in butter, and sprinkle some salt on top. Let them sit undisturbed for a few minutes to develop some browning. Then flip, salting again, and allow the other side to cook for a minute or two more. When your carrots are super vibrant and have softened just a bit, turn off the heat and add your honey, stirring and shaking the pan to create a nice sticky emulsion. Make sure you’re coating all of the carrots in the sauce. Then add your favorite fragrant herb and some chili flakes if you want some spice! I added thyme to add a bit of a woody element to balance out the sweetness of the honey.
I served mine with some roasted chicken and sautéed kale. I’m so happy to have these carrots in my repertoire and will proudly serve them at my next dinner party!
As far as the actual ingredient measurements go, measure with your heart. This recipe should feel very intuitive to you as long as you remember to use your senses - how does it look, smell, taste? Does it need more salt? More honey? Let your intuition guide you.
