Okay, we can start by acknowledging that the title I gave this recipe is a bit much but it’s all part of the brand - let’s move on.
This just might be one of my favorite lunches I’ve put together and will definitely remain a staple in my recipe repertoire as it continues to expand. It was born out of inspiration from Trader Joe’s frozen brown rice… ah, such a muse. I decided I was going to try my first microwaveable 3 minute steamed rice bag in conjunction with some fresh arugula I
picked up and then it snowballed from there. Cut to sautéed sweet potatoes, chicken, avocado, hemp seeds, lemon, and a drizzle of balsamic later, et viola!
A trick for quicker assembly is to cut your sweet potato into a very fine dice so it can cook faster on the stovetop. I let it cook until browned and just starting to soften before pushing it to the side and adding in my chicken, letting it sit undisturbed until nicely browned, then adding lemon juice to the whole pan and flipping to cook for another 3-4 minutes.
Bonus tip!!! My friends often comment on how nicely browned I can get my chicken and that really comes from removing from heat, chopping, adding back to the pan and shaking it around to pick up some of the fond left in the bottom of the pan - this works especially well with an extra little squeeze of lemon to assist in the deglazing process.
After adding everything to my plate, I gave it a drizzle of Seggiano’s original balsamic glaze. This stuff is my holy grail 10/10 condiment that I highly recommend!
